Step-by-step

Select the first keyframe in the timeline
Hold Shift and select the second keyframe to select both simultaneously
Right-click on the selected keyframes
Navigate to the Bézier curve menu at the bottom of the list
Select 'Curve' to enable the smooth animation path
Adjust the animation progression using the handles in the newly opened curve display above the clip

Options

Toggle back to 'Linear' mode to remove progressive acceleration/deceleration
Move keyframes directly in the timeline to change the timing or duration of the animation

Tips

Use the 'Curve' mode to make zooms feel smoother by starting slowly, accelerating in the middle, and slowing down at the end
Check the curve display to visualize how scale values (width and height) change between keyframes
